Sweet potato and bean burger

Sweet potato and mixed bean burger with Avocado, cucumber, tomato, baby gem and dressed with a rich and creamy mayo.

Ingredients:

Medium sweet potato
400g tin of mixed beans washed and drained 100g panko breadcrumbs
½ tsp garlic powder
Handful of coriander
Salt
Pepper
½ tsp of cayenne pepper
½ tsp chilli flakes
½ small red onion diced
2 tsp plain flour
Avocado
Cucumber
Tomato
Baby gem
Mayo

Method:

Cut sweet potato in two length ways, brush with olive oil, season and roast until soft and skin is easily removed (leave to cool).

Add the mixed bean and sweet potato to a food processor, blend until smooth, transfer the mixture into a large bowl then add the bread crumbs, flour, spices, finely diced red onion salt and pepper to taste.

Mix in the chopped coriander, then form mixture into burger shapes. Place on a tray and cover with cling film.

Leave in the fridge for 30 mins.

When ready heat a pan with some veg oil and pan fry the burgers 3-4 mins either side until golden brown. Once cooked place on kitchen towel while you build the burger. Slice open the burger bap and spread some mayo on the base, add the baby gem, tomato and cucumber. Add the burger top with the sliced avocado and dollop with mayo to finish.
