Roast Carrots in Blankets with Lemon and Dill Mayo

Sweet and Savory Non-Pig in Blankets with a tangy Lemon and Dill Mayo!

Ingredients:

Carrots x 5 medium size

Ready-made pastry x 1 sheet

Mixed Seeds x 30g

OPB Mayo

Lemon x 1

Fresh dill x handful

Almond milk x 30ml

Method:

Peel and cut the carrots into desired length approx. 6 cm. Then roast until tender but not soft. Leave to one side to cool

Chop the fresh dill and sprinkle over the cooked carrots

Place the puff pasted on to a floured surface and cut into 6 cm x 6 cm squares.

Place the cooked carrots in each square and roll to make the sausage rolls

Brush with almond milk and sprinkle with the mixed seeds

Bake in the oven until golden brown and crispy.

While they cook add the OPB mayo to a bowl squeeze lemon juice and mix in the chopped dill, give all a good stir until it’s all incorporated.

 

Serve the Carrots in blankets with the lemon dill mayo and enjoy.
