Maple Roast Heritage Carrots with Garlic Aioli

Sweet and savoury treat with roasted carrots and toasted almonds dressed with OPB Garlic Mayo

Ingredients:

Heritage carrots x 12 random size shapes

Olive oil x 2 Tbsp

Toasted almonds x 20g

Pomegranate x 30g

Fresh herbs x sprigs of you favourite 

Mint x sprig for garnish

Maple syrup x 50ml

Only Plant Based Garlic Mayo x 100ml

Water x 20ml

Sea salt

Method:

Cut the carrots in half, length ways

The slice carrots at 1mm intervals but not all the way through

Brush with a little oil and season with sea salt.

Place into oven to roast, about 5mins before they finish and are tender drizzle with maple syrup to make sticky and sweet.

Add the OPB Garlic mayo to a bowl and add some water mix well.

This thins the mayo but leaves it nice and creamy.

Roughly chop your chosen fresh herbs and leave a sprig of mint for garnish.

Place the roasted carrots on you serving platter and top with the toasted almonds, drizzle more maple syrup and pomegranate seeds fresh chopped herbs

Drizzle the Garlic mayo over and finish with the mint.
