Whether you are looking at light brunch or that after lunch snack, this great take on a modern classic ticks all the boxes!


Ingredients

  • Sourdough Bread

  • Sweet Potato Humus (How to make your own at bottom)

  • Sliced Fresh Avocado

  • Sweet Pickled Baby Beetroot

  • Apple Crisps

  • Extra Virgin Olive Oil

  • Only! Plant Based Garlic Mayo

Method

  1. Brush sourdough bread with extra virgin olive oil and toast in a dry pan

  2. Layer sweet potato humus, sliced fresh avocado, sweet pickled baby beetroot and apple crisps.

  3. Drizzle Only Plant Based Garlic Mayo over the top!


Ingredients for Sweet Potato Humus

  • 1 Tsp Cumin

  • 1 Tsp Garlic (Chopped or Minced)

  • 1/4 Tsp Cayenne Pepper

  • 1/2 Tsp Coriander

  • 1 Tbsp Tajín

  • 1 Tbsp Olive Oil

  • Pinch of salt

 

Method

  1. Pre heat oven to 180 Degrees

  2. Oil and salt sweet potato and bake in oven until soft. Set aside to cool

  3. Peel sweet potato

  4. Add all ingredients to food processor and blend until smooth paste. *Tip add water depending on what consistency you want. *

  5. Leave in fridge until required. (Lasts for about 3 days)
